The best Turkey ever and the first one raised by my family and the first Heritage Bird to be eaten by my family.

I was so worried waiting to get that first bird cooked properly and served up and tasting well.
I smoked it for about 5 hours brought it in and the juices ran clear and the rich flavored meat OMG.
the Tom was around 18lbs dressed out and here is a picture of it.
CELIE I forgot to get a picture of the bird processed.

I hope every one had a verry Merry Christmas

Well done!

It was great the turkey flavor was so Intense.
I find the best way to describe the flavor its like the Rooster that I made into chicken Noodle soup its like I boiled down 5 store bought Chickens and condensed the broth till the flavor is 5 times richer flavored.
I am sorry about going on about the Turkey but its been over 40 years since I was on the farm and had forgotten what I was missing and of course having to wait for 9 months till serving one up for my family.

Celie The wife still is boycotting eating Chickens and Turkeys that we have raised she says that there to Much like pets yet she has never done any thing to help raise them that's what I get for marrying a city Girl or least this City Girl

I knew you would NOT be talking about THIS city girl, cause I only grew up in the city, but an a Country Girl at heart. I love having lots of animals around, but after I feed them, they feed me! If they weren't bought for food, they would probably have never been hatched in the first place. Hubby doesn't like dispatching them, so I do the squeamish part, but he has no trouble eating them. Sounds like wifey is going to be, "on a diet", soon !!!!
