here, let me show you how...
you need a good sharp pocket knife or a solid paring knife.
if you look carefully at the pomegranate you'll see they aren't actually round - they have 4 or 5 ridges that are just a bit more promenant than the rest of the fruit.
take your pocketknife and make a deep score down each of these ridges from the flower end to the stem end. the cut should be 1/4-1/2 inch deep, depending on the size of the fruit.
now cut around the flower end, cutting out the little flower protrusion like a core. you should have a cone-shaped hole in the bottom of the fruit after you cut the flower out.
stick the tips of both thumbs into the space left by the flower cutout, put your fingers on the sides of the fruit, and split it open by pulling it appart with your thumbs. the fruit will break into sections along the scores, no cut seeds, no fruit juice flying around and dripping on your favorite shirt.
once you've got these sections open, you can peel back the membranes and roll the seeds out with some gentle pressure from your thumbs.
the trick is the white pith is thickest along the ridges and the seeds form around that, so cutting the ridge doesn't get into the seeds.
I think next time I'll cut along the ridges like in the posted video and then separate the seeds underwater. Should make my next batch of pom jam even easier!
