Ha! I never had enough eggs when I started, so I added more. I still never have enough eggs, so I'm letting my broodies go nuts this spring! I don't think there is such a thing as too many eggs.

Hello everyone, just got caught back up. Thank you all so much for your prayers and condolences

Today, I redid my coops! Here is is the coop they were in. I call it a "grow out pen". It is 8x6x4, works great for my 7 smaller birds since they get to range all day every day. They only go in it to lay eggs, eat and sleep. It is a pain to bend over to go in and get their eggs, but it worked. However, DH did not want the chicken free ranging all the time, something about them getting priority over the dogs...besides I have a really nice big coop next to it, Just needed to get it re-set up.
Here it is, the dogs were kept in the kennel area, I had shorted it so it did not attach to the main coop. So I had to re-do that, then clean up really good, dogs are gross....plus fix holes the dogs had made. Now keep in mind I am 5'2 and these are 6 foot tall and 10 foot long, had to do it all by myself since DH had to work today. Then I took 2 20x6 shade cloths and connected them into a 20x12 shade cloth and attached it over the kennel. Can't have enough shade in TX. It was SUPER windy today so trying to mess with them was like working with a sail. My arms are exhausted but I am so happy with the result. Do not get me started about the main coop, it is NOT what I wanted, but DH built it for me and did not want my input, it is 8 feet high

Right ... no leavening in the cake. Just for old fashioned funsies. It would be poofier with duck eggs!
I have a whole flock of runners you could have ... they get the others all stirred up. Mine need more space. They are cute, but noisy and flighty. I want to trade them in for Cayugas, but it doesn't work like that.
The Monte Cristo casserole sounds awesome! I tend to prefer savory things to sweet ones ...
I love flan, and would make that if I weren't such a lazy cook!!!!!
I kinda like to prep, cook, and eat all out of the same pot with the same utensils. This works better when I live alone.

I think furtive critters tend to evoke that gut response. I am that way about some spiders.... As long as they are running away I am ok.... but let them run toward me and the last thing they see is the bottom of my shoe. Though I have spent hours watching jumping spiders do their business.... they are sooo cute

When I checked this morning, there was only one egg in the nest so I didn't bother getting it. I figured I would go down at lunch and get them, but I didn't make it. This is what I found when I went down there a little bit ago! The girls decided to cram a dozen eggs into one nest! None of the other nests had any in them! Silly girls!
That is such a beautiful sight!! I love your nests and the materials you use and I love how clean your eggs are....I like a clean, natural nest like that. Not often my eggs get smudges either because the feet get cleaned off on the grass and deep litter.

Coop tweaking time!!!! My favorite time of the year...spring coop redos. I can't wait to rip into mine when the weather warms up....going to change nearly everything!

Yep, I have said it before and will say it again, I wish it were shorter and wider, like meThat is one TALL coop!
To DH's credit he is 6'3 (yes over a foot taller than me), so to him 8 feet is not as high as it is to me, still...

My coop/poulry area is much like yours including the tarps.... I live in very windy country... What I finally learned was to use a horse lead rope with the clip on it to secure the tarps temporarily Kind of loose Tie it down to something that wont fly with the sail Then work on the other ends.... Its amazing how much stress it takes out of the job knowing if you let go It aint going anywhere. Plus if you need to you can use the rope to pull the tarp up and over things for stretching..... anchor the tarp.... on something then tie the rope to the other end and tie a stick on the end of that rope then youcan either toss it over or feed it through what ever place you need to fasen. The stick wont back out.... Now you can get the tarp going up and over....
I am 5'8 and use a walker.... and I work alone always

Here is a nice, simple Egg Custard recipe. I'd put vanilla bean in the milk before heating ...

Pinch salt
Vanilla
Heat milk but don't boil
whisk eggs, sugar, salt
Stir eggs into hot milk
Pour into casserole dish
Place casserole dish in larger roasting pan, add hot water to roasting pan (careful!)
Bake
Nutmeg, etc.
I was telling Dad, there are so many versions of each recipe that I'm starting to believe one should just add the ingredients one like in one's preferred proportions and add heat until it all reaches one's own preferred doneness level.
