This is a great recipe! And the reason they call them forgotten cookies is because back in the day they were the last cookies made because they were baked last......and forgotten....I usually just spoon them onto a parchment lined cookie sheet.
this is more like a cake/pie thing. I love it. Wish I could make it. I'm looking for a dairy free whipped cream substitute right now and haven't been able to find anything that works. I used to make it with Cool Whip. They changed the recipe for that though I can't eat it anymore.

Yippee skippie! The coop is done! (well, nest boxes but we have a little time for that yet) Today we put in another window (it's on the East side though. Couldn't talk him into the west side - he said that with the window on the East it will shine right on their roost, and the sun would help the coop get a morning head start on warming up. On the west it would be totally in shade anyway.) Then we put in two more vents, one on the north side and one on the west, and the pop door. I'll be getting some pictures soon. We put up one of Molly's old x-pens just temporarily to see if they'd come outside on their own and they love it! In and out, in and out! At first we put it up at the people door - it's not very big and not very stable. Then when Ken finished the pop door we moved the x-pen over and they took to it immediately! Gotta get at the run now!

Nobody's using the roost yet. I think we're gonna leave the heat lamp off tonight. At midnight it was 34 degrees in the coop, 28 outside, and when I went out to check on them a few were under the lamp, some were eating, some were scratching around, but nobody looked uncomfortable. Tonight the low is supposed to be 35. If I'm jumping the gun turning off the lamp, tell me now!

LOL  Yep.... Me loves goaties....sob....  and Me loves Mulies too.  My ex friend/roommate rode mules for 45 years.  She was a riding buddy and I developed a real liking for them.  I would love to get a Hinnie....  Mule born from a donkey....  They are smaller and perfect for here.

I have a recipe for you try.  It is the best!  Very summery too.  Just what everyone needs after this horrible winter.

Forgotten Meringue 

Preheat oven to 425*

Beat:
6 egg whites (I used the powdered kind but 'real' work too)
1/2 tsp cream of tartar
1/4 tsp salt
1 1/2 c sugar
1 tsp vanilla

Spread into a greased 9x13 pan.  When oven reaches 425*, place pan in oven and turn off the oven.  Let stand 8 hours (or overnight).  Very important - DO NOT OPEN THE OVEN DOOR!
Frost with 1/2 pint whipped cream. Refrigerate until ready to serve.  Top with sliced strawberries before serving.  

At my house this makes about 8 servings and rarely lasts more than a day or two.

This recipe is written for those who know how to make meringue and how to whip cream.  If you have questions let me know. :)

Thank you much. There's only one thing I see wrong... letting them set in the oven 8 hours. That would be hard to do! lol

Welcome to the Front Porch, soon to be neighbor! SH and I are buying a house north of Green Bay.
I grew up in Crivitz, have been in Wyoming for 7 years and am now moving back to the area.
You guys have had a heck of a winter this year, sounds like spring is not too far away though.

LOL funny how life is. I always dreamed of living in Wyoming. Welcome back to Wisconsin.
All this talk about baking is making me hungry. I'm thinking Peanut Butter cookies.
