this is more like a cake/pie thing. I love it. Wish I could make it. I'm looking for a dairy free whipped cream substitute right now and haven't been able to find anything that works. I used to make it with Cool Whip. They changed the recipe for that though I can't eat it anymore.This is a great recipe! And the reason they call them forgotten cookies is because back in the day they were the last cookies made because they were baked last......and forgotten....I usually just spoon them onto a parchment lined cookie sheet.

LOL Yep.... Me loves goaties....sob.... and Me loves Mulies too. My ex friend/roommate rode mules for 45 years. She was a riding buddy and I developed a real liking for them. I would love to get a Hinnie.... Mule born from a donkey.... They are smaller and perfect for here.

I have a recipe for you try. It is the best! Very summery too. Just what everyone needs after this horrible winter.
Forgotten Meringue
Preheat oven to 425*
Beat:
6 egg whites (I used the powdered kind but 'real' work too)
1/2 tsp cream of tartar
1/4 tsp salt
1 1/2 c sugar
1 tsp vanilla
Spread into a greased 9x13 pan. When oven reaches 425*, place pan in oven and turn off the oven. Let stand 8 hours (or overnight). Very important - DO NOT OPEN THE OVEN DOOR!
Frost with 1/2 pint whipped cream. Refrigerate until ready to serve. Top with sliced strawberries before serving.
At my house this makes about 8 servings and rarely lasts more than a day or two.

I make before going to bed. But then you want to eat it for breakfast. It has milk and eggs and fruit so it's ok for breakfast, right?Thank you much. There's only one thing I see wrong... letting them set in the oven 8 hours. That would be hard to do! lol
