Does anyone have a really delicious chicken pot pie recipe? I make a pretty delicious pie crust and have a really bad craving for pot pie. I'm thinking of making it this weekend. I have to be a weekender now with work, so I need relaxing things to do on the weekend, and eating is one of those things, hehe!

Also, someone mentioned coconut cake earlier. What was that about and can I have a recipe? ;). Ooh! Coconut cream pie! Or my famous, from-scratch German chocolate cake! But then again, what kind of German chocolate cake would it be if it wasn't from scratch? Well, I say, it would not be a cake at all.

I think every culture on earth has some form of food like this.... From Rolled cabbage to dim sum.... Tasty bits rolled with starch and wrapped in leaves or paper and steamed....

but Yeh.... hot foods help you handle hot climates....

Real tamales, unlike their candy counterpart, are normally not spicy. They can be, but the ones I eat are just seasoned really well.

I'm from Deep South Texas where hot and spicy are one in the same. We eat spicy food to cool down in the 115 degree summers. :D

Nearly the entire population around here is Mexican - born or only a generation or two born in the USA. That's why when I say I love Mexican food, I literally mean Mexican food. The chefs around here cooking in the restaurants were born and raised in Mexico and they brought all their recipes with them and haven't changed them. It's pretty brilliant.

We have several "real" Mexican restaurants in my town. Good food! I like fajitas or chicken quasadillas, not crazy about tamales.

Spicy I love and wouldn't want to live without. I usually start out every day with an omlete concoction with a jalapeno and a serano in it. If I am out of peppers my eggs have to have a good dusting of cayenne pepper.

My favorite is egg rolls! Yum! I see a whole lot of Hispanics in the Chinese restaurant.

Something I haven't had in a long time is good Southeast Asian/Middle Eastern food. I love Iranian food. I wish some of them would move to town and open a restaurant.
 
Woke up this morning to two more cheeps. Makes six so far out of 20 eggs. I really thought that none of them would hatch because our temps were so cold when I gathered them. Two more are pipping. Has anyone else had a hatch that spanned 3 days? It started on St.Patrick's day and is still going! Now we are really going to have to expand the coop. I have 18 more in the brooder in the barn, plus the 11 that survived the dog attack. My friend wants me to hatch a few for a project with her granddaughter, but of course I will have to set at least a dozen to make sure I have enough.
We have a new Mexican restaurant opening soon here. I am hoping for the best. I grew up in So. Cal and travelled all over Baja. I really crave good, spicy food, but so far the only Mexican restaurant we have found close by is just a step up from Taco Bell. I cook a lot of it but some ingredients are hard to find. (now I'm craving chile rellenos and fish tacos), but our friends are coming over for Rueben sandwiches from the St. Pat leftovers. Maybe Mexican tomorrow
