You add the spices when you start to cook it. Everything goes in at once. I always have to cook mine a little longer without the lid to get it as thick as I like it. It does thicken a little as it cools. I made some this morning and it still isn't quite where I want it. I am going to leave it in the refrigerator tonight and reheat and jar it tomorrow. It is too late tonight. I don't like to serve this to guests because they guilt me into giving them a jar and I run out way to soon. LOL These apples come from 2 wild trees on my property and I have to fight the deer for every apple so I don't get to make more than a few pints a year. I use an apple peeler that spiral slices. I think it' s too chunky so I use a stick blender to break up the pieces after they cook down. It is a matter of what texture you like. It is a good basic recipe and you can play with the spices and textures and it still is yummy.
Bbbbbbuy eeeeggs?Okay, folks, time to bump it up. Where is everybody? I've got great news and wanted to tell you about it. Today I sold 27 of my excess birds. I only kept 10. My five stunning White Plymouth Rocks, 2 Sapphire blue egg layers and two Barred Rocks and one Coronation Sussex. All my hatchery birds are gone. All 10 of my scrawny roosters are gone. I made money and freed up two coops for breeding next year. I'm so relieved to not have to bust my chops all winter on a bunch of birds. BUT I have to buy eggs for a couple of months until they start laying.I do have Swedish Flower Hens in the incubator but I don't count on them until I see them running.![]()

My fellow that's coming to build my coop tomorrow is bring me 3 dozen at $2 ea. Not bad. I'm so spoiled already because I've only had layers for 6 wks before selling them. I do have 7 new ones come along with combs redding up so maybe only a month or so.Sounds good! We have an ANCIENT apple tree up past the north end of the field. From the still alive to downed trunks, it looks like there were originally 7 trunks to this thing. Maybe someone dropped an apple 50 years ago and 7 trees just grew wild. The trunks are probably 16" -18" across. The still alive trunks are almost more horizontal than vertical and only one seems to have apples on it. The apples are small and green, even those on the ground so I figure it is OK to eat "little green apples". I picked up a bunch off the ground for the chickens and those I could reach off the tree for us to eat if we like them. I have no idea what variety they are, they are really neither sweet nor very tart. In any case, perhaps they would make good apple butter!
