What would this color be known as?

Also, do you just sort of make up birds and varieties/colors as you go, or do you kind of have a plan of varieties that you want to make ahead of time? If that makes sense.

I have a plan ahead of time. It's not to hard for me to get an idea of something or certain variety. Then I break it down by what genes it would need and what other varieties I could cross to get all the genes on one Bird.
Then I have think about what crosses to make for X amount times to get all the right genes in and all the wrong genes out.
Most projects will take a few generations so I run those through my head to make sure the plan will work and which way would be the shortest or best path to limit the number of unwanted genes. Usually in the process I can see other varieties that can come from the same project.
One project can spiderweb into several.
All that stuff comes pretty easy and quickly what is slow is the actual breeding, hatching, raising and repeat.
So ya getting an idea and thinking it through and then doing it is how it works for me.
