When it comes to baking anything, I get my recipes out...there's too much chance of messing up without. I'll post a copy of what I use for the muffins in a minute, I'm way behind here.
 
Happy Saturday! It's been madness over here lately. Seems to be endless things going on.

Currently getting ready to start my final year of nursing school and raising a busy 7 month old!

Sad to say 2 dogs came through our place about a week ago and killed 16 of my 18 chickens. It was brutal. I've been devastated to say the least. Hoping to "start over" next spring :hmm

Hi Riv, glad to hear from you! I bet your baby does keep you busy, she's figuring out new things every day I'm sure. So sorry to hear about your flock, that must have been terrible.

I actually ended up sicker, again last night!
I cannot believe it, but I do think it may be covid again. I tossed my coffee the last two days because it didn't taste right.
I have the cough, the headache, as well as, thrush mouth and a sore throat. I've read that this is a symptom. I wish I had some Gentian Violet; but who keeps that around anymore? It is an ingredient in Blue Coat, and I have some that I used on a hen with gleet...but her butt to my mouth..uhh uhh!
🤢🤣 I've been wearing my 😷 mask, but I've noticed, since the vaccine came out, that about half the population is not.
I hope things go OK, when you are back on campus!

@Madhouse Pullet this is my favorite banana nut muffin recipe:

Muffin:
1 1/2 Cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
3/4 teaspoon cinnamon
1/2 teaspoon salt
3 mashed, ripe bananas
1/2 Cup white sugar
1/4 Cup brown sugar
1 egg
1/3 Cup melted butter, cooled
1 teaspoon vanilla extract
1 Cup chopped, toasted nuts (walnuts or pecans are good)

Topping:
1/3 Cup packed brown sugar
2 Tablespoons flour
1/4 teaspoon cinnamon
1 Tablespoon softened butter

*Preheat oven to 375*. Lightly grease either 12 regular size muffin tin cups or 6 large size muffin tin cups.

* In a large bowl, mix together flour, baking soda, baking powder, nutmeg, cinnamon, and salt.

* In another bowl, beat together bananas, white sugar, brown sugar, egg, melted butter and vanilla extract. Stir in nuts.

* Mix wet and dry ingredients just until everything is moistened. Spoon batter into greased muffin cups.

*Mix topping ingredients together and spoon over muffin mixture.

*Bake in pre-heated oven about 20 minutes for the smaller muffins and about 25 minutes for the large muffins...until a toothpick inserted in the center of them comes out clean.

DH even likes them and he normally won't eat anything other than blueberry muffins.
I love blueberry. Never made them from scratch.
