I don't know, never had it. I do know that I went fishing with my grandfather and once he caught a sand shark. He filleted it before taking it home. Gramma said "you can't fool me, that is shark" and refused to cook it. Don't know how she knew other than I bet Grampa didn't bother filleting things he knew she would cook.

Shark has a definite "look" to it as well as a slightly ammonia odor... the older it is the stronger it smells. of ammonia...
