The NFC B-Day Chat Thread

We will be having left over rib roast from Sunday.
Well, except for DD1 the vegetarian. I never have much of an idea what she will be eating for dinner. When I ask what she wants she most often says "I don't know". I tired a LONG time ago of telling her that I don't know how to make "I don't know". Hopefully she'll have better luck at school, we leave Thursday morning.

We had that growing up. Layers of thin chocolate wafter cookies, whipped cream and shredded coconut. Haven't seen that kind of cookie for some time.

Bruce, is your DD going off to college?

Re: the chocolate wafers...the last time I made that dessert, I ended up having to buy 3 packages of the wafers because there were so many broken ones in each package. But the final dessert turned out pretty and the luncheon people liked it!
 
Had a spinach and cheddar cheese omelet, just a little 2 egg omelet in the small pan, so not a very big omelet but delicious, and blueberry pancakes, made 2 huge ones rather than a bunch of small ones, those probably weren’t very healthy but I did eat spinach and get blueberries in (I put a lot in them) and limited the syrup and I had apple cider vinegar (the good Braggs organic with the mother kind), wildflower honey, and a splash of lemon juice, in hot water cause I think it’s supposed to be good for colds/immune system, and I woke up with a stuffy nose, dry irritated eyes, and a bit of a cough/scratchy throat, and my chest feels a bit funny, congested or something, so wanted the boost aha it did at least boost my energy too and I do feel a bit better. Weird way to start the New Year but I am feeling a bit better. Tomorrow dad and I are starting diets or at least eating way better and exercising. We are possibly going to throw away or hide all the processed foods too or at least the really bad stuff and no bread, pancakes, etc. My dad especially is a big bread eater. Oh and we all went out to breakfast yesterday.

We just got finished watching the LSU and UCF game boy was it really a nail-biter but LSU pulled it out! @007Sean looks like A&M skunked NC pretty bad yesterday too. Buckeyes are getting ready to start at the Rose bowl...even tho' I am an alum and worked there I probably won't watch it. One game a day is all I can take.

Thanks Debby! Hard when we have so many bad things in the cabinets, fridge, and freezer atm but we’re both sick of all the holiday weight we’ve gained lol plus they went to the Bahamas for a week and ate and drank a lot there too

You gotta love a good biscuit though!

Cheddar bay biscuits are good but a lot of work

How to make Ultimate Cheddar Bay Biscuits:

2 1/2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 teaspoon ground cayenne pepper
1/2 teaspoon garlic powder
1/2 cup butter, softened
1 1/4 cups grated cheddar cheese
1/2 cup sour cream
1 1/4 cups milk
Note: If using a baking mix, replace first 5 ingredients with 2 1/2 cups baking mix.
Place first 5 ingredients (or 2 1/2 cups baking mix) in a large bowl. Add cayenne pepper and garlic
powder. Work in the butter with a pastry cutter. Stir in cheese then add sour cream and milk. Scoop
biscuit dough out by big spoonfuls and place in a greased 9 x 13 casserole pan. (Or other type of pan
with an edge to it–if you use a flat baking sheet, butter sauce will spill down into your oven.)
Topping
6 tablespoons butter, melted
1 teaspoon garlic powder
1 teaspoon parsley
dash of salt
Melt butter. Stir in garlic powder, parsley, and a dash of salt. Spoon half of topping over unbaked
biscuits. Bake at 450 degrees for 25 minutes.* After removing biscuits from the oven, spoon the rest
of the topping over them.
*Your baking time may vary due to the size you scoop your biscuits. When I make this recipe, I make
20 biscuits in a 9 x 13 pan.
If 20 biscuits is too much, of course you can cut the recipe in half.
Now let me point out an obvious fact–this is a drop biscuit recipe. It is meant to be scooped by the
spoonful into the pan, not patted and rolled out and cut. That said, it does not yield a runny dough.
Let me demonstrate.
I use my homemade Quick Mix. Here it is measured out exactly to 2 1/2 cups (with the recipe printed
out from Farm Bell Recipes).
You can use another baking mix, or you can make the recipe from scratch if you prefer, using the
directions. Cut in the butter.
Stir in the cheese.
Add 1/2 cup sour cream and 1 1/4 cups milk–here you see it measured out.
It makes a moist dough, but not runny. See how the dough stands up on the spoon.
First biscuit plopped into the pan, holding its shape.
Ready for the oven.
yep, reads like a lot of work, i just use mommas way, she always mixed them up with her hand, got them the way she wanted( kinda wet and sticky) floured her hands and pinched off a bit and rolled them and put them on the backing sheet , pressed down a little and baked.
but i love the cheddar biscuits too, so does husband, so will try these, thank you
 
we have mocking birds for that, some of them will sing all night, one of my favorite birds:)

One of my favorites too, but they are in short supply around here anymore, and the ones that are here are no where near as vocal. I think the Cooper's have done a number on them.
