forgive me everyone, forgot time differents, i got on here somewhere around 5:30, couldn't sleep anymore:confused:
No Problem!

I am up now making coffee and just finished the coarse grind of the pork. Next is spices and then the second grind. I will let the meat set for a bit with the spice and will then shape the patties!

I will have some for breakfast too

already had my coffee, which is also my breakfast, now working on cooking our dinner which will be half southern new years and northern new years to cover both bases lol:lau
 
Sounds delicious @ronott1 and good luck for your quail hatch. They are such cute babies - I've missed not hatching any this year.

I was up at 4am. Mr Tui (a native bird) is up around that time too singing at the top of his little lungs, declaring his territory. Plus its horribly humid here at the moment. I enjoy getting up early though as I get some time to myself.

I have two out of 28 in lockdown so far. One is black colored and the other tan a tan color

I baked a ham last night so will have white beans and corn bread

we have mocking birds for that, some of them will sing all night, one of my favorite birds:)
 
We're still working our way through the Christmas ham. I'm about hammed out! :p
Most of the Ham is in the freezer. I will use it over the next several months. The hock will go into the instant pot with the beans for Dinner.

A ham, this was a half ham, will make a lit of dinners!
