The NFC B-Day Chat Thread

just got back inside, fed the chickies then put some mums into start mixture to see if i can get free mums(broken piece from the auction, got the guys trained down there that when a piece of flower gets broken off they give it to me) then went into the garden , picked some okra, few more tomatoes, a few more beans, fed the piggies some tomatoes and cut me a bouquet of zinnias, now i start washing some jars just in case and also i bought a small dehydrator to try and also a tomato hand turn food strainer and sauce maker just for a small batch of tomatoes so i don't have to get the big electric one out so they also have to be washed:p
I been immersing myself in Canning videos... I soo want to learn how to can bought all the stuff to do it a couple of years ago but grandma would have had a fit if I tried it then.

It's a good thing to know how to do. I did a bit when we had our little place in FL, there was a real satisfaction in looking at those finished jars and know you did it.

I want to do ingredient canning, for the pressure canner. Simple things that can be made into many different meals. Very few if any seasonings. Bone broth both chicken and beef. Also Ghee.

Then I want to also do some Water bath canning. Pickles mostly

I used to grow zinnias from seed, they're pretty easy and so many variations. The mums I used to just get the started ones. I hope the clippings you have take root for you.
yes, i start the zinnias from seeds, well most of them, i did buy some plants from burpee this year, a new variety, strawberry blonde, discovered i really love them so i'm keeping as many seeds as i can, so far hundreds, will also keep seeds from the ones in the garden too, most of those i bought the seeds this year and started for husband, he likes the big ones, and some mulicolored ones i kept seeds from last year, really gorgeous
as for the mums, given time before the frost, they will start and i will have to bring them in, not winter hardy here
should have said the strawberry blondes were marigolds, we love them and for some strange reason they're not cheap around here

not really hard deb, just time consuming, the hardest part (for me is the planting but i also love to play in the dirt so not hard lol) theres nothing like hearing your jar ping as it seals, makes you so proud, i do it the old fashion way, no pressure cooker for me, scared of them, momma had one blow up one time when she was cooking dried limas, beans everywhere:lau sounded like a bomb

I've done everything except the salmon that you've listed.
@sharron how do you can veg without a pressure canner? I was told it wasn't safe?
It all depends on the Ph of the veg/mixture. Safest bet for most is to pressure can.

well, i only can tomatoes, beets, green beans, i think what other vegetables i grow and want to keep i freeze, i guess i could can but mil taught me to freeze those and save the jars for other things, the tomatoes i open kettle , the beets, green beans i water bath them. of course it takes different times to can but so far its always worked for me and we ain't dead yet:lol: mil lived to 92, course the last 5 or 6 years she didn't can
sometimes i think they tell you that you can't do it my way just to have you buy a pressure canner but think about it, old days they didn't have pressure canners and they canned back in those days, sure, once in a while you get a bad jar but you hear about recalled foods all the time don't you? so i will continue to do it my way, i hate change!!!!!!
