well, i only can tomatoes, beets, green beans, i think what other vegetables i grow and want to keep i freeze, i guess i could can but mil taught me to freeze those and save the jars for other things, the tomatoes i open kettle , the beets, green beans i water bath them. of course it takes different times to can but so far its always worked for me and we ain't dead yet:lol: mil lived to 92, course the last 5 or 6 years she didn't can
sometimes i think they tell you that you can't do it my way just to have you buy a pressure canner but think about it, old days they didn't have pressure canners and they canned back in those days, sure, once in a while you get a bad jar but you hear about recalled foods all the time don't you? so i will continue to do it my way, i hate change!!!!!!

glad to "see" you, hot out there? been kinda hot here but i like hot better than cold and snow and i'm sure not as hot as texas:D
It is hot here to but the crops need the heat.
@sharron how do you can veg without a pressure canner? I was told it wasn't safe?
My mom never had a pressure canner and we never got sick. She canned a lot with having 12 kids.

I was afraid of mine at first but now I’m not. I watch it pretty closely.

I have been busy building a run and feeding, watering my critters.

not really hard deb, just time consuming, the hardest part (for me is the planting but i also love to play in the dirt so not hard lol) theres nothing like hearing your jar ping as it seals, makes you so proud, i do it the old fashion way, no pressure cooker for me, scared of them, momma had one blow up one time when she was cooking dried limas, beans everywhere:lau sounded like a bomb
Pressure canners are a bit different than pressure cookers... and are pretty safe these days so I am told. I want to raw pack meat and you cant do that in a water bath.

I got the bug for it back when a friend gave me some home canned Tuna... OH MY GAWD was it good. Ruined me for store bought for many years. I also want to raw pack salmon.

Then I want to do Beef and chicken as well...

I have an issue with loosing power at home and I cannot count on refrigeration. So best to have a food storage strategy that doesnt need refrigeration.

So we will see if I can get it together here and do some pressure canning.
