Pressure canners are a bit different than pressure cookers... and are pretty safe these days so I am told. I want to raw pack meat and you cant do that in a water bath.

I got the bug for it back when a friend gave me some home canned Tuna... OH MY GAWD was it good. Ruined me for store bought for many years. I also want to raw pack salmon.

Then I want to do Beef and chicken as well...

I have an issue with loosing power at home and I cannot count on refrigeration. So best to have a food storage strategy that doesnt need refrigeration.

So we will see if I can get it together here and do some pressure canning.

well, i did it many years ago without a pressure cooker, but i will admit it was on the round steaks mil told me that he liked them that way and that the amish cold packed it and thats the way she did it too, haven't done it since tho cause i preferred my steaks grills, rare to med.rare
they were like roast beef, just fell apart when heated back up, just add gravy
never tried chicken tho or pork
