Good morning Everyone...

Had a great day yesterday and its following through for the beginning of today.

Did some things just for Me... Happy about that. Then Came home With dinner in hand told the kid and he was happy. He doesn't get home from work till about five usually later because he goes by and gets take out. I haven't felt like cooking at all.

So While I was waiting for him to come home I started two batches of refrigerator pickles.... Um er pickled veggies. One container got about six sliced onions Then Fennel sliced. Diced Chayote Squash... I wanted to give it a try because It Grows prolifically on a vine so It would be an excellent choice to grow at

The other container got the other bulb of fennel Sliced cucumbers and some of the tenderest Asparagus.

In the first one I filled half way with water. Then added a cup of white balsamic vinegar and topped off with White vinegar. And of course Herbage.... Ground black pepper, Mustard seed... I couldn't find my big container of sea salt. When I do I will add some. As well as fresh garlic... its AWOL as well.

I did the second container exactly the same but used Dark Balsamic Vinegar.

Each container has a semi water proof lid. I took the containers and tipped them back and forth to mix the ingredients. only leaked a few drops I am good with that. When I finish I may try putting plastic wrap over the opening then put the lids back on. May help the integral seal out.

Oh and I tasted the Chayote. Its crisp like a Slightly green pear mildly sweet. I hear it takes on what ever its cooked with. A great addition to Jams and often cooked with spicy foods.

Ok and then... I found a bag which I thought was canned goods. Prime Rib I bought last weekend. :eek::hit Then I remembered what my dad did in such a case when I was about thirteen.

He washed the meat in salted water and added lemon juice and let it set for an hour. Then pulled the meat out and put it in the refrigerator. To dry out some. When He cooked it He embedded sliced garlic through out the meat. The beauty of it was those were the tenderest steaks I ever had and very yummy. They had to be cooked well done.

So... I wont be cooking prime rib on Christmas... I am cooking it today. Low and slow and well done. It will then be frozen and I will take out the slices and pan sear them on Christmas. Just as well Mom likes hers well done, Son doesn't like beef but will eat some... and I love it but cant eat much at all.

Of course I will taste before freezing. IF its a no go I will make it into dog food and can it. Of course picking out the garlic and slicing off the Herb crust ... Sigh.

so... Christmas dinner Mayy be Roasted Cornish game hens set on top of Stuffing... Always have a backup plan....:thumbsup

So... Today I find the Salt and the garlic... I am going to crust that meat in salt to help draw the moisture out, from soaking in the water.
