i think when we butcher will have to have something to smoke the bacons and hams and theres no where close that cures so we either have to learn or leave it as fresh meat
Until I have the smoker fixed, I'm holding off. But I'll cure the bacon once it's fixed and then smoke it. Yup, I'll break the rule and thaw the meat, cure it, smoke it then refreeze it.
 
Think polenta with a totally different preparation. Alton Brown did a nice good eats episode where he showed the difference in preparation with the same grain. And, absolutely, you want someone who really understands how to make them to try them. I hated them until I found myself down south.
aren't polenta and mush about the same thing? course i never heard of either til i moved north with husband, his mother was a great one for mush(she was a good cook too, not as good as my momma but good)

have you watched deep south homestead on youtube? he has a video on doing your own bacon (and building a smokehouse)
 
I've watched so very many I don't remember.
i like them danny and his wife, they're in Mississippi, they live on 10 acres and are preppers, i guess, they have enough food put away to last a year, every growing season they can and replace what they use. at first didn't think much of him but he grows on you :lol: not sure about some of the things he says but i do like the way they do things

Good news is that there is no change in my aortic and mitral valves. Blood pressure in my legs is fine. They admitted that the BP in the legs check was a mistake, but would have done so at 80 anyway so just got it done early - serious apologies over this. We talked about the multi visit thing and I was assured that first and last visits did not incur a Medicare fee only the tests were charged for. Next year the number of visits should be just 2 not 4. You would have been proud of me. I was very calm, logical, and adult.
