we use all but the peter peppers for eating raw, altho i do dry some and then make seasonings with them, the fish peppers, haven't used yet, want to make sure i have plenty of seeds so i don't lose them. didn't think of using them in pickles, thanks, will remember that next year
I’ve seen lots of recipes with peppers in them for pickles. Usually they call for jalapeños or red pepper flakes. I just popped a whole dried Thai pepper in there to see what would happen.
