The NFC B-Day Chat Thread

It's going to be a wonderful day... Meanwhile thought I'd share deconstructed enchiladas recipe.

1 quart homemade salsa (buy a jar if you must)
1 chicken breast
1 can black beans (home canned is best)
1 can whole kernel corn
1/2 C Sour cream
2-3C shredded cheese
3-4 flour tortillas
3 scallions
taco sauce

Using a small pan, put the salsa in the pan with the chicken breast. Using medium low heat bring to a boil and boil for 12 minutes. A little longer doesn't hurt. Pre-heat the oven to 375. Take the chicken out and shred it. Let the mixture cool. Mix in the sour cream and add the beans, corn, chicken and a cup of cheese. Spray a 9x13 pan and pour the mixture into it. Tear up the tortillas and mix them in. Cover with a nice layer of cheese. Top with finely chopped scallions and drizzle with taco sauce. Bake 20 minutes or until cheese is browned. Let stand for 5-10 minutes when it comes out of the oven before serving.

No, we can’t get spots on the weekend. It is too stinking hot to camp 🥵We are going next week for a few days. Sunday we are helping oldest son’s girlfriend move. She’s putting her stuff in storage for awhile. She will be moving up North for her internship, then she has to move to Aberdeen, SD for a few months for the rest of her internship. She graduates in May.

I hear you're lucky if you can find camp spots on the weekends, right now. My oldest son just went camping Tues-Thurs because that was all his Grandma could find available. Hotels are booked too! Was looking months ago for one for my anniversary at the end of August but, nada!

Sounds exciting, she's got an adventure ahead of her. I hope the move goes smoothly! 🤞

Some nice adds either in the mix or on top... If you like cilantro a hand full of fresh chopped really kicks up the flavor. Also sliced jalapeno or sliced pickled jalapeno and sliced black olives are a nice add. What I like about it is one chicken breast makes two meals and a lunch for us.
Some nice or did you mean rice?
