1 large raw egg at room temperature
1 teaspoon Dijon mustard
2 teaspoons apple cider vinegar
1/4 teaspoon sea salt
1 Cup avocado oil

Crack the egg into a tall, wide mouth jar (do not use a bowl).

Add the Dijon mustard, vinegar and salt on top of the egg.

Pour in the avocado oil.

Carefully submerge a hand blender right over the egg. Blend on low for about 20 seconds without moving the blender until you can see most of the jar contents have turned white. Then slowly start to move the hand blender up and down (don't lift it all the way out or you'll make a mess) until everything is well mixed.

Store in the fridge. Last a week.

I need to get moving here. I just booked 2 days of camping. This is a new park for us. Hubby needs to get out of here. Between the shed and lack of rain, he is driving me nuts…maybe I need to get out of here too. :lol:
I'd invite you to visit, but I'm sure the heat would be unbearable.
