I haven't looked at the temperature yet, but it is so humid that I'm already drenched. I've been harvesting cucumbers. I told my hubs that it's time to pull some vines. We could feed all of the state of Texas. He keeps saying he is going to garden on a smaller scale, but he gets a little carried away. The zucchini and squash aren't producing very well, nor or the eggplants or okra. The cherry tomatoes are suddenly overwhelming. I hate canning when it's this hot.
Does anyone have a recipe for a cucumber & tomatoe relish or salsa? One that can be kept in the freezer?

(No bell pepper)I never thought to make freezer salsa, but Taste of Home has a tomato salsa recipe (no cukes, sorry): freezer-salsa It has a 4.5 star rating and the commenters shared some of their ways of personalizing it.
