Check out this recipe by Chef John, that's the one we really like: Chef John's Zombie Meatloaf. It's delicious, lots of flavor and moist.

I only shape it like a zombie around Halloween, the rest of the time I just shape it in a large log. Here's a picture of mine when I made it a zombie: :gig

I'm going to try this. Not the zombie shape, but the recipe. I've never seen a meatloaf recipe with buttermilk or cloves in it. Are the cloves very potent, or do you notice the flavor at all?

I don't know what the recipe would taste like without those...they add moisture to the meatloaf. The celery adds just a tiny bit of flavor, and you can't taste the mushrooms at all.

If you try the recipe with those changes let me know how you like it.

Hi Janie, the cloves are only used if you make it a zombie. They are only used in the "eyes" as decoration. You don't eat them.
