Thai Lime Spatchcock

Marinade

3Tbl Lime Juice
2 Tbl chopped Fresh Coriander
1 C Coconut Milk
1 red Chili Chopped
2 Tbl Honey
Freshly ground Black Pepper

Method

  • Cut spatchcock down middle of backs and flatten. Thread a skewer through wings and a skewer through legs of each spatchcock.
  • To make marinade, place lime juice, coriander, coconut milk, chili, honey and black pepper to taste in a large baking dish. Mix to combine. Place spatchcock flesh side down in marinade. Cover and refrigerate for 4 hours or overnight.
  • Cook on a hot Barbecue or under a hot grill, basting frequently with marinade. Cook 15 minutes on each side, or until tender and cooked through.

Thanks, it absolutely is. I worked a couple of dogs - the Princess has gone to town - later we will go to a 'touristy' area in Pa. I will people watch - the Princess will shop - and I have fish tacos on my mind. :drool

And so is his new brother.

Beasley was a perfect gentleman when we had company. He was very gentle with the little boys.
I think we adopted the perfect dog.
