FORGET-ME COOKIES

2 egg whites (room temp.)
3/4 c. white sugar
1 tsp. vanilla
1 c. chocolate chips

Preheat oven to 375 degrees. Lightly grease large cookie sheet.

In a clean stainless or copper bowl beat egg whites until foamy. Gradually add sugar 2 tablespoons at a time. Beat on high until whites are stiff. Add vanilla, beat briefly. Fold in chocolate chips until evenly distributed.

Drop by small spoonfuls onto greased cookie sheet. Turn off oven. Put cookies in and forget about them until morning.

We made Christmas sugar cookies this week, and plan on making a few more things still. My grandma always made what she called "cookie candy" from other recipes I've seen though, it's usually called something along the lines of "no bake cookies." Sugar, butter and cocoa brought to a boil for one minute, then you add peanut butter, vanilla and oatmeal. Drop onto wax paper/cookie sheets, and let cool-yum yum!
