Sorry. Should've just said it to begin with lol two things. One is I'm gonna potentially be getting ACCS which is like a more wraparound service where I'd have a team of a few different people/specialists or whatever and meet more like once a week instead of once a month like with case management. That's good. And two and the part I am unsure about is I've been offered a spot in their outpatient clinic. So all my care would be in one place and would be coordinated. Sounds great, right? Except I LOVE my current therapist and provider. I FINALLY found a great one after trying a few. So I'm hesitant. But the care there at DMH is supposed to be even better and I would be dealing with actual professionals who tend to stay instead of constant rotating interns like I've been and still am dealing with. My current therapist is an intern so WILL leave at some point. And my case manager tried to reach out to my prescriber this last hospitalization and he never got back to her. If I switched, she could just go knock on their door. 🤣 everything is telling me this is better but I'm hesitant because I love my providers. 😭😭😭 I DID tell her to submit it though. It won't be immediate anyway and I'm sure the spot won't be available long. And my dad thinks it's a great idea. But shoot.

Same here, showery all day (almost 3pm now). We're up to 4.5" since Friday, most of it falling on Saturday, and another big wave of rain predicted starting Tuesday night. I've been waiting for it to let up a bit before ducking out to tend the girls and gather eggs; they are not best pleased, hunkered down in their covered run and grumpily looking out at the rain...except the 2 Easter Eggers who poke & scratch in the open air outer run unless it's pouring heavily. They're up on the straw bale scratching around now as I gaze out the window...
Time to build an ark! Wow, that's a lot of rain!

Luckily we are south so will not get the big rain and wind this time.

Not so lucky for rainfall totals however. We are way behind in rainfall this year.

Thank you!!! I did end up telling her to submit it but it could take a while anyway so I have time. But I felt kinda forced into it by both of them lol mostly by my dad lol I do think it will be better but I loveeeeee my current providers so I’m very nervous.
 
I don't, unfortunately. One thing I want to try is a yeast/baking powder combination. Another is treating it like a pastry, leaving tiny chunks of frozen butter in the dough.
I would try adding a half a cup of powdered milk first. Another thing to try would be adding corn starch.

The sourdough recipe also has corn meal in it which changes the crumb.

Adding baking powder is a rising agent so acts the same as the yeast. Are you trying to get big holes in the English muffins? Proofing might be an issue if so. Over proofed will not let the dough puff enough.

I watched a video where a guy was deciding if the dough was over proofed based on the ph of the dough. That is quite scientific!

I changed the temperature that the loaf of sourdough bread proofed at this weekend. It did not get as puffy or sticky as before and it puffed up very well in the oven.

I thought I might not have let it rise long enough. I tried to use identical treatment so I could make sure the test was good, which meant that I had to ignore the instructions on the recipe which called for an overnight rise.

One of the "outlier" recipes added baking powder as well as yeast, so it's a possibility. The two batches I made yesterday were again like flattened rolls. The flavor was almost right, but the texture was all wrong.
 
Problem with sourdough is that you have to use it. I make maybe a loaf per week, certainly not enough to keep a sourdough culture alive.
Using it is no problem if your chickens love it too. Yes it doesn't keep but as long as I can work it off with a little help from the chickens none is wasted.
