The Old Folks Home

Just put the roast in the crock pot. I added a can of Cream of Mushroom soup, a packet of brown gravy mix, two packets of onion soup mix, and about a cup of water. I will let it cook on high until I go to bed, then I'll turn it down to low and it will be ready for lunch after church tomorrow. I will add instant mashed potatoes, steamed broccoli, and a small side salad.

ETA : If you haven't tried instant mashed potatoes since you were a kid, try them. They are really good now (NOT as good as home made, but WAY easier, and nearly as good.) I will use the gravy made in the bottom of the crock pot on top of them.

I mostly do 30 minute meals around here.
 
Morning all! I woke up to the most wonderful smell from the crock pot. There is too much liquid in the gravy, but I can put it in the skillet and reduce it. I tried a small bite, and it is wonderful! I could have left it on low, I guess, because it is already tender and ready to eat. I cut it off and will turn it back on to warm around 10:00am. Once I get it on a platter, I'll try to get a pick before the boys tear into it. Dang meat eaters.........

I live in a place where when I drive into town I must drop down into one of the largest potato producing areas, aka "the potato flats" (just north of THE potato producing area) in the second largest potato growing state in the nation. Serving boxed mashed potatoes around here is considered a form of sacrilege, and probably a form of child abuse. Heck, you would probably have to go to Walmart to even find a box and I wouldn't even be surprised if just having a box of the stuff in your cupboard was some sort of misdemeanor offense unless you only use it in place of cornstarch for a gravy thickener.

BTW-how many of you use potato starch in place of corn starch? Much smoother, lumps up a lot less.

try tapioca starch or flour for pies and etc.

Potato flour or starch is great in bread recipes too.

DH's parents were potato lovers through and through. In their retirement years they even had a restaurant -- The Spud Hut or Spud Shack or some such -- that served nothing but iterations of potatoes along with the meat to go with it (pot roasts, steak, chicken). I think one of the greatest compliments I ever got from DH and siblings was upon serving my mashed potatoes "Oh, Mom would've LOVED you!" (and, apparently, Mom didn't love many outside of her own immediate flesh and blood)

Blood is thicker than water, but mashed potatoes are thicker than blood......
 
I had a great sourdough starter recipe that I got from The Western Horseman magazine, oh, easily 40 years ago where you created the starter with boiled potato water. Wish I still had that recipe as the biscuits were stellar.

I am German and Irish, so potatoes are a big part of life.

Potatoes are a better source of potassium than bananas and if you do not use too much oil they have less calories.

If you have leg cramps, try baking a potato at night before bed time and eating it.
