If I remember correctly, the US can only produce about half the shrimp it consumes, so they need to import the stuff. All our shrimp here is imported, we don't have them naturally. Only crayfish.

Deb: I totally agree about buying imported seafood. I was surprised to see shrimp from vietnam in walmart...
The thing about crawfish is that most people dont purge them to get the poop out of the intestine. It makes a big difference...
I love love love sushi. Its expensive around here tho. And not very popular..

So when you purge the crawfish how is that done? Do you feed them cornmeal....? I dont know why I thought of that.... shows how much I know....

We get our sushi fish from the place the restaurants get it from for much less than going out for sushi. My bf has gotten to be quite a talented sushi roller the past 9 years :)

To find the gumbo I liked the best I lived in New Orleans for a year and a half and tasted many a gumbo, I found one I liked and learned how to make it. I make my roux with lard, butter and rice flour and will take up to 45 minutes to develop the dark roux I like. Most people quit too early into the roux.

I set up a crawfish vivarium for my son when he was about five.  Poured in play sand in a hard sided kiddie swimming pool made little dunes and everything then we poured in water that had been declorinated and put in about five crawfish   what an interesting project. 

We found out the Crawfish like to get out of the water now and then and dig caves to hide in during the day.    we found foot prints all over the sand dunes and little half caves dug in the damp parts.

We fed them fish pellets and little bits of fish from dinner occasionally.    Its a good thing to do for little kids before they get jaded about stuff like that.

Neat here I thought I had odd pets... I had eels too.

Deb, very fresh taste, not at all too sweet. Texture was pretty nice too, not too jello like. The dairy products really balanced that out. All in all, pretty good ending to a filling meal.
 
With regard to shrimp consumed in the US once I found out that alot comes from overseas I stopped eating it... I do buy and eat shrimp that is identified as coming from the US or Farmed in the US. But I rarely eat shrimp at fast food restaurants.... I also refuse to eat Pollack after seeing the factory farm ships that are strip mining the arctic for it.
