Has anyone ever done any "spatchcocking"?
A way of cooking smaller fowl. You split the carcass so you can unfold it like butterfly style. A fellow BYCer said he thinks you cook it by braising. He said YellowHouseFarm on here was talking about it for cooking Ancona culls.
