Hello All! Sorry it has taken me a while to get back on here. Been crazy busy since I got back from vacation and I'm getting ready to go out of town again tomorrow for a week. My company is having a quarterly meeting in Salt Lake City for the beginning of the week and I am taking advantage of the free plane ticket to hop down to the southern part of the state for a few days to hit red rock country. I tried pestering SCG into coming with me but she has to work so this will be a solo trip. I skipped over a bunch of posts so I am assuming she shared how wonderful our Yosemite trip was. We had an awesome time except for SCG hurting her knee. Nothing too major (we hope) but she has promised she is going to get it checked out. I am glad we went the week we did because the following week they had snow at Glacier point which closed that road for a day or so and they had a rock slide on the road that we were taking in and out of the park each day. No one got hurt thank goodness, but the road only just reopened today. That would have really put a massive cramp in our plans. Here are a few of the pictures I got

Except for cleaning the cooler, I am mostly done for today. Couple minor pieces left, but that's ok.

Got the stock parts roasting in the ovenView attachment 1046658 View attachment 1046659 , soon to go in the slow cooker to make stock and strain for stew meat.

Got a giant pile of parts of 6 birds and 2 whole birds in foodsavers, and resting for the first of two days down in the basement fridge.

I also got the kitchen garden planted while I waited for BF to come home from work (he does the actual cutting up of parts once I get the birds down to dead naked wholeness).

I am bushed.

People on airplanes now wear jammies!

I remember when as a kid, traveling with my dad, men wore suits and ties on planes, women wore snazzy dresses and fancy jewelry.

Not saying then was better or worse...just that change blows my mind. :lau

I wonder if most people are too busy looking at their phones to notice? :lol:

I'm not sure I understand the onion question... are you talking about how I don't skin them for stock? Yeah, it'll be strained and then pressure canned, not concerned.

As far as air travel goes, we are treated so poorly by TSA and the airlines, crammed in like cattle awaiting slaughter. I am uncomfortable enough in my jeans, I couldn't imagine dressing up.

Busy weekend here. Hot, humid and rainy. Most of the rain hit after sunset though so the days were just sticky and hot. We managed to get all the harvested wood split and came up 1-2 cords short of being done so hi ho hi ho it's off to kill trees we go. Luckily we aren't felling viable trees but thinning out overgrowth of spindly, bent trees so the old growth trees have a chance to mature.

Yesterday I pulled my first dish pan of beets. I'm amazed on how well the garden is doing after it had such an rotten start. I need to pick cukes today and put the beets in the freezer.

Chickens are doing well for a change. My setting Welsummer hen is down to three viable eggs. Two had quitters in them and one is a dud. Hope she is happy with just 3. My speckled Sussex hen, a first time broody, has 6 viable eggs under her that are developing nicely.

I have 6 chickens that I'm expecting to loose at some point in the near future to Marek's. Luckily, knock on wood and mutter a prayer, there aren't any new birds with symptoms popping up and my hens that are symptom free and hopefully resistant are now 27 months old.

No, not the skin but the large chunks of onions. That looks delicious! :drool
I always hack my onions up...I guess diced would be the word ;), but half that size would be scrumptious with a roast. I have to admit I've never done stock. Basically what your saying is you cook the chicken, onions and carrots...strain it, can it and that's the stock? No one in my family has ever made stock.:oops: My mom was a mean canner...but not stock. (that I know of)
