Looks so good! Yum! I was some!!Picked blueberries earlier this week and turned some into spiced jam. Today I made a pie (and the crust).
Gotta go picking some more blackberries, probably early tomorrow morning. I'll probably make a blackberry cobbler or crisp in the next few days.
BF made some rooster stew tonight and I am in the process of making bread.

Thank you so much for sharing your recipe with me! I will have to make some and try it, But it sounds delish!Easy enough to do... I think this is the best pie crust recipe in the world:
4 cups flour, give or take depending on humidity
1.75 cups shortening
3 tablespoons white sugar
2 teaspoon salt
1 egg
1/2 cup very cold water
Mix first 4 ingredients together until crumbly. Whisk egg in bowl, add water. Add to mixture.
This makes enough crust for 2 pies with bottoms and top. It is incredibly flaky and delicious. I use a large duck egg and Crisco (plain or butter flavored). You can freeze whatever you don't use for later, it keeps very well.

The blueberry filling is:
4 cups blueberries
0.75 cups white sugar
3-4 tablespoons cornstarch (more if frozen or large berries to cut the liquid)
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 tablespoon butter
Combine dry ingredients, mix and pour on top of blueberries in a bowl. Pour into crust. Dot with butter. Add top to pie. Bake at 400 for 50-60 minutes on bottom rack.

Sounds good. I will have to try it next time I make a pear pie! I love them!The place where I picked the blueberries gave me the recipe for the blueberry spice jam last year. That recipe is to die for. I will be entering it in the fair this year. Anyway, this year they gave me a blueberry pie recipe, but it is really much more complicated than I'd like for it to be. You've got to cook a quarter of the blueberries and then simmer them in sugar and flour and spices... I might try the recipe one day when I have a lot of time, but for right now, I need to throw the ingredients together and basically walk away. This recipe does that. And the pie crust recipe I use in all my pies. It really is fabulous, give it a try with your favorite pie. And the best part is I think it's easier than store bought crust.
