I just made bone stock for the first time.... Bout three turkey backs a chicken carcass and some trimmings from pork ribs. Mostly cartilage rib ends and connective tissue.
Bout a whole huge onion couple of celery stalks diced fine.... and a whole bulb of Garlic split in half skins and all.
The smell was driving me nutzo this morning... after 24 hours of simmering. So the intention was to pick out the bones... but many of the bones disappeared As all the veggies and onions and garlic... Only a few of the dried skins were left.... I strained it all in a Collender. And came up with a woppin.... two cups of broth...
I tasted it.... OMG concentrated.... I divided it and placed equal amounts in quart jars and added water to it... The flavor is awesome... Now I can use it in stews and soups and even stir fry.
By the way the bones and all the left over bits would be excellent chicken fodder... I wanted to feed it to the dog... but I couldnt pick the bones out.... I think next time I will place the bones in cheese cloth
and No I didnt use vinegar... didnt think aboutit.
