Mine too... I'm hopeful.

When you make quick rising breads like scones, biscuits and soda bread, you have to pay a lot of attention to the proportions, and absolutely do not overwork the batter / dough
 
I just got a phone call from my cousin in central IL. She said it was snowing big flakes there! Weird Weird Weird weather for the midwest. Found out that I have two cousins on Methotrexate. Family genes are crap, LOL.

If it isn't morning yet, I'm going back to sleep.....:gig
 
Soda bread is difficult. I have tried and tried. Only successful from a mix :(

I spent an hour in the examining room- with legs hanging over the end of the table, waiting for the doctor to come in. I started going exercises with them to keep them from falling asleep. Was worth it though, young, very cute 1st.year resident- red hair & red trimmed beard like my son.

Had lots more fun with him - but, mostly behaved myself. I didn't ask if he was married, saw he didn't have a ring but, you never can tell. And I resisted asking how old he was.

He tried to trip me up doing a more intense "is she senile or not," exercise. I passed all the questions. My only failure was when he asked me to hop on one foot. I could NOT do that on either foot. Must be something in my genes. I think when I was a kid I probably hopped.

I've never had great balance, but, did learn to roller skate, ride a bike and stay up on ice skates. And lately haven't tumbled off the computer chair when I took an impromptu

I Do!

I have been making a cheddar cheese quick bread that is a hit with the family. I also have a good Irish soda bread that is good too.

Irish Brown Bread

Legend has it that the different Irish counties vied to see whose brown bread were the best. The secret lies in the flour, so buy the best flour you can get.

  • 1/2 cup all-purpose flour
  • 2 1/2 cups whole wheat flour
  • 1 cup oat bran
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 tablespoons dark brown sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 cup vegetable oil
  • 1 3/4 cups buttermilk



METHOD

Preheat oven to 400°F.

In a large bowl, combine flours, bran, baking soda, baking powder, sugar and salt.

In a separate bowl, mix together egg, oil, and buttermilk.

Make well in the center of flour. Using a fork, gradually mix in liquid ingredients. When the dough leaves the sides of the bowl and can be shaped into a loaf, turn onto a lightly floured surface. Knead lightly for about 5 minutes.

Divide ball in half. Put each half into lightly greased 8 inch round pan. Cut an X across whole top of dough with a sharp knife.

Bake in preheated 400°F oven for 30 minutes until crust is light golden brown, and loaf sounds hollow when rapped with the knuckles. Cool on wire rack.

Yield: 2 small loaves
 
Just out of curiosity can any of you guys (any age) hop on one leg. I feel like such a failure:rolleyes:
Hopping is not that hard! Not falling after the hop is the hard part....
