The image uploads are often handled by client software developed by the phone manufacturer, so the cloud storage company doesn't handle the development of that software. And the process of making that user end software can be a bit interesting, I actually worked on a team where some people were developing that kind of things. I just did some testing for them, but there were a lot of issues in the beginning. We didn't run into security issues then, but there were a lot of other things that behaved pretty interestingly. It would be interesting to see how they got the finished product to work.
And one thing to remember, is that you don't have to back up everything, you can just have specific files that you've given the cloud software permission to use. In that case, I'd say the rest of your files are as safe as they would be on any computer connected to the internet.
