The Old Folks Home

Its odd I am an odd one. I love cheese cake plain. Gram cracker crust is all it needs.

AND I have had a savory cheese cake and loved it too.

savory cheese cake:

This one is made with swiss cheese. and just a few herbs....

But I am thinking one made with smoked salmon with a garnish of salmon eggs would be yummy... With a puff pastry crust of course or a good butter crust.

Ok, so, a different type of cheesecake..gottcha! lol...that looks good! Sounds good now that I have the sweet part out of my brain.

Yeh working around that sweet thing is a paridigm shift for sure. If you take a look at cheese cake in general it is acutally considered a custard... Cooked like a custard too. in a water bath.

While I love the sweet versions I Was charmed by the first taste i ever had of a Swiss cheese cake. It was sinfully yummy....

At the same potluck I sampled:

Avaocado pie... still hvent found a good recipe for it.

And a Phillipeno dish of rice noodles and barbequed pork.... OHMY GAWD... and of course when i go to look it up its one of those family style dishes that can have varying different herbage... But it was lightly sweet and rich and the noodles tasted the same. This was back in the late seventies and I was stunned that the guy was the cook. He was one of those body builder guys that the girls followed all over the place.

Ok Guys I live in Avocado land.... Street vendors sell them ten for five bucks in some places...

I just found out you can FREEZE them... Awesome

http://www.californiaavocado.com/blog/september-2015/how-to-freeze-california-avocados

two ways... one is smash em up and one is individually.

I have been to those street vendors. they buy culls. Good to eat but they need to be eaten yesterday. I asked what they do with the left overs from the days sale... They sell em to pig farmers.

Avocados.. are an Atkins super food....

But in places that require vegitalble fat can be substituted.... like in cakes and brownies.

They are great fat (avocados) i am having trouble with thinking of them in a pie :idunno

As to the cheesecake salmon thing... Isn't that just a creamy salmon spread?

There used to be a family up here that did a cookie exchange every year, with a big party, and everyone brought appetizers.

Anyway, the first year... They just said something along the lines of "come to our party, have fun, bring cookies to swap and and appetizer to eat here"

NINE out of every ten families brought salmon, ALL of the salmon was some kind of salmon dip. Some was salmon dip with cheese, or salmon dip with cream cheese, or smoked salmon dip with... Uh... Whatever.

I thought it was awesome... It was like a taste test / competition between salmon dips!

I hope they didn't bring salmon ice cream

So funny....

Up here, if you are poor.... Or just do not want to spend money... You eat salmon.... Lots of salmon.... Oodles of salmon.

Everyone has salmon in their freezer.

The year of the big flood, all of the bridges that lead to town were washed out... After a week of only "emergency" flown in supplies (only some milk, and baby formula), everyone I knew was still fine.

Sure, there was NO salad in town, and no green anything (except of course for mold... This was fall).. But everyone had food... Lots of Salmon, you just had to suck it up and eat it without sour cream or lemon.
