May I ask for your prayers for my oldest daughter? She left her extremely abusive husband and nearly od'ed last night. She is in the hospital.

Make sure to add some fat to the pork. Pork shoulder does not have enough fat even though it is one of the fattest parts of the pig. I added trimmings from a pork loin. Another good choice is fat trimmed off of beef. I freeze it until I am ready to grind for sausage.

I am so sorry bout your Daughter! Will she start a program or go to rehab?

Counseling for the abuse would also be a good idea.

 
This whole area was agricultural at one time. In the 60's, someone came up with an idea of of "mini-ranches," and divided it up into roughly 5 acre parcels. Quite a number of people bought in as an investment, but found the restrictions annoying enough not to actually build on the lots at that time. Zoning came decades later. Our lot, and that of our neighbor, are on the perimeter, so are odd shapes and sizes.

There's a lot of "ya gotta catch me first" going on in development around here, but there are also a lot of people downtown who really just want to collect their paychecks and go home; they don't want to help you achieve what you want to do, they just want you to go away. They get grumpy and obstructionist if you ask them to do their jobs - while it's possible to get things done in spite of them, this requires time and money, and that is my point - there's only so much money to be made on such a small parcel, so at what point does the whole thing become too much hassle to be worth it? Water and waste disposal have become huge issues in this area (hurricanes have caused epic flooding in recent years, and they came close to water rationing during a recent dry spell). We are on the coast; wetlands are taken so seriously around here that when the county created the well field behind us, the semi-permanent puddles on the dirt road were measured and charted and a wetland was created to replace them since improving the road eliminated them.

Yes, there is a lot of pretty dense housing not too far from here, and more going up every day, but would the neighbors who raised such a stink that they convinced Walmart to build elsewhere sit still for that on their back doorsteps? Tough call.

That is SO "we have no brains" bureaucratic. Nice that they made the wetland (hopefully a truly functional one, not just a large depression in the ground) but to even consider that the puddles in the road constituted a useful "wetland" environment?

Yep, people get their permit then do what they want. The zoning people likely will never show up to see that you have done things that were not permitted. In my prior city I found out that if you do something that wasn't permitted (either without one in the first place or "above" what was permitted) and they find out later, there is NO repercussion, not even back taxes on the increased value of the home. I heard recently that one person down the road got permission to do some stuff from the DRB a couple of year ago. The proposed deck was turned down, but they built it anyway. When their neighbors turned them in, the zoning office gave them a permit for the deck since it was already built EVEN THOUGH the DRB SPECIFICALLY said "no deck". But pay your property taxes even ONE day late after decades of paying on time and there are fines and interest charged.

So... This morning on the Facebook Alaska Farm and Food page.... There is a thread discussing what to do with 50 pounds of bunny pee.

Oh my. I hope she can see a future for herself. I'm sure it is very hard to decide to break free of the abuser, especially when there is no paved road ahead. But she did that. Onward.
 
Thank you all so much. We are going to try to get her some counseling for battered women and hoping this will help her on all levels. She has not been out of his grip very long and I know she is terrified he will find her. We were going to move her every few days. She literally ran down the highway for 2 1/2 miles to a church for refuge she only had the clothes on her back.
