The Old Folks Home

Hey, one good thing about being old folk is that we made it this far and hopefully everyone under the age of 55 will some day be old folk too, God willing. So are all welcome.

Merry Christmas everyone. Got the cookies baked. Just took pumpkin pie out of the oven and the prime rib roast is thawing. I woke up this morning to discover I'd beaten off my cold and for once, my back isn't hurting!

Bring on Christmas! I'm ready!

I have bird ready to go in freshly butchered hen turkey sitting in her bag of seasonings
pies are done chickens are cleaned they got hamburger buns everyone having a great time in the coop
cranberries where cooked last night only room left is with 4 dozen eggs in the egg fridge so
they camped and cooled out there and deviled eggs in the fridge also
 
I think its a region thing in CA....  Here it was a Big Navy town so we get people from all over the US so Biscuits and Gravy are on the menu in most breakfast places.  Some do it better than others.   They weren't on the menu at home though.   Grandma wasn't a cook mom was even worse.  I learned how to cook out of self defense.... 

the  best Biscuits are made either with lard or Crisco....  but some make them with butter or half butter half crisco.   Flour, shortening, salt, and milk or butter milk.

the key to making light fluffy biscuits  is to cut the cold fat into the flour either with pastry cutter or a fork.  till the combo is like crumbs.  
I used a fork.  After rolling out the dough to about half inch I used a water glass.  

There are other variations I am sure  but thats basic...  After I learned how i switched to Bisquick and followed the instructions...   Bisquick can be used for pancakes and waffles too.

Yeppers...that is the way to make biscuits.

I am Texian from my dad, Texan from my mom... and biscuits and gravy are big in Texas.

My rancher great-uncle started every morning with biscuits, gravy, bacon, and eggs. He made the biscuits himself by scratch.

I THINK biscuits and gravy is a southern US thing (as in "country" southeast US, not west coast). I grew up in Southern California, never saw biscuits and gravy on a plate or menu. I've lived in Vermont for 37 years, same thing. As such I will not attempt to describe the makeup of the bread in "biscuits" because I don't know.

There are plenty here who do I'm sure. It would be interesting to see the geographical makeup of those people, and if it is common where they live now if that place is not anywhere near where they grew up.
I grew up in Southern California the Los Angeles area and there was biscuits and gravy on our menus and even a few restraints like Denny's served biscuits and gravy! There was a Pink Restaurant called Bell Isles in Orange County that specialized in serving the ball players and they served biscuits and gravy and they had sausage in it and it was a huge serving enough to feed an entire family.
 
I make my biscuits from scratch also but now I use coconut oil solid in place of lard or oil and they are still very good. My parents raise us with biscuits and gravy at times in Southern Calif. We loved them and I still do.
 
Momma was a southerner. That means biscuits and gravy, grits, beans and ham hocks,corn bread with chittlins, red eye gravy and black eyed peas, fried chicken with milk gravy and mashed potatoes, fried potatoes with onions, all the good stuff.

Lordy, it's a wonder I didn't drop over from clogged arteries by the time I was 35. DH and I eat pretty healthy now. No fried foods, well, I have to admit, I do indulge in fried chicken on my birthday, but otherwise, it's colorful veggies, no high fructose, and yes, I still make biscuits and sausage gravy on occasions.
 
My wife is a southerner and I love southern cooking. We don't eat chitlins,but I love the field peas, biscuits and gravy,and fried chicken. But my all time favorite snack is boiled peanuts. mmmm...

We were from Wisconsin may have been born in Norfolk VA but never really lived there
after 3 months old I really have no memory from there...
