Quote: I read the following article among others last night. Wow...lots of interesting things!

https://www.backyardchickens.com/a/common-egg-quality-problems

I don't think my eggs are anywhere quite as intriguing as the eggs in the article. Here's one of the eggs in question. I was able to pick it out of the eggs it was sitting with...expecting a tiny spot or two with the white. This egg is from my black hen. Out of the 66-69 (I can't get a specific count on the darn girls, even at night) hens/pullets I have...about 4-5 hens have a higher percentage of having a tiny speck/specks. It's those I was wondering about. DH says I worry too much.

Is that few something to worry about in regards to disease? Wouldn't I have seen some fallout before now if it was Mareks etc? (Don't' scare me Ron...lol)
I worm when it's freezing super hard so anything expelled dies and gets cleaned out with the bedding. I was thinking/hoping it was possibly hereditary. I'd rather not breed those girls to produce chicks I'll use their eggs to feed the pets or feed right back to the girls.

The most serious egg quality shell issues I have according to Sumi's article are 3 hens laying eggs with spots on the shell. I'm including a pic of the one. But her egg inside is flawless...and I can't remember ever getting a spot in hers. I was planning on breeding her to the Cuckoo Marans so I'd have offspring with tan eggs to use as table eggs so they don't get confused with the blue/green eggs I'm collecting for hatching. My oldest girls are at least 3.5+ years old, a large bunch are 2 and everyone else is in between...down to the pullets hatched in November and I think only 4 of them haven't started to lay yet.

Is this your first pepperoni foray? I'm intrigued. Tell me more.
first on pepperoni but I've done summer sausage many times, same way. I usually get a kit from LEM products. The larger quantity the cheaper.
I had a ad on BYC in mobile for Waltons sausage, better prices on spice kits and casings, where I got everything this time.
Really don't have to smoke them and liquid smoke actually does a good job if you do want smoked flavor and they actually sell smoke lined casings that impart some flavor but costs more.
I just smoked for 4-1/2 hrs at around 80* and then suspended them in the oven at 175 for hrs.... with a corded digital meat probe centered in one until they reach 160, actually just got done around 10pm and I started around 9:30 am... Patience kinda like hatch day, speed it up is not good.
Don't want to go above 175, cause the fat in the meat doesn't stay incorporated, melts and drains to the bottom or makes soft fat pockets.
They are a cured sausage with 'sure cure' sodium nitrate' so cool temps for long time is ok.
I've done it, too hot oops, still ok but not what you want. Hopefully these suckers turn out ok for the amount of work put into them.
Just went went out and checked on them, was going to get them to room temp, stuck my good therm in one just to be sure, before tossing the pile into refrigerator, think I better do something with them now Lol!

Lilwildrabbit, Your little buff boy is a doll. I love my buff O's, especially the roosters. I call mine the Chairman of the Board. He follows me around chattering as if he is giving me the daily coop report.

My husband saw this on BYC and set it up as my desktop wallpaper. He said it described me perfectly:
