The Old Folks Home

Use the baking instructions and this recipe:

A very moist and soft, light rye bread with a crisp crust and a kick of pepper – just the ticket for soft cheese and smoked salmon sandwiches.

325ml regular black coffee, warm or cold
150g rye flour
2 tsp crushed black pepper
2 tsp anise, fennel or caraway seeds
1 tsp dry instant yeast
1½ tsp salt
325g strong white flour, plus extra for shaping
1 beaten egg and poppy seeds, to finish


Put the coffee in a saucepan along with half the rye flour, the pepper and your seeds of choice. Whisk, heat until thick and just boiling, then spoon into a mixing bowl and set aside to cool until warm. Add the yeast, mix well, add the salt, the remaining rye flour and the white flour, then mix to a smooth dough. Cover, leave for 10 minutes, then on a lightly oiled worktop knead for 10 seconds. Cover, repeat twice more at 10-minute intervals, then leave for 30 minutes.

Line a baking tray with nonstick baking parchment. Using a little flour, pat out the dough into a 20cm square, then roll up tightly. Place the dough seam side down on the tray, cover with a cloth and leave to rise for 45 minutes. Egg-wash the top, sprinkle with poppy seeds, cut six diagonal slashes across the top and bake at 220C (200C fan-assisted)/425F/gas mark 7 for 40 minutes.

SCG thank you for NOT showing us what is left of rats after the ducks got to them. Really they can kill rats, did the ducks get all bit up? Are you sure your broody Turkey didn't sneak out and "off" them?

Certain. They're in a chain link enclosure and don't get visitors, except the rats. I did see another rat last night (alive). Traps generally don't work here, I put them out and the rats are smart enough to know what's up.

Going to be hot as hades here today.

Trying to catch up on some chores that were avoided due to working too much and then the cemetery work the last 4 weeks. Anyone have fun weekend plans?
 
My son just got a job on the Midway. Its a museum here. only a month there and he is quickly absorobing the terminology.... and learning how to navigate the museum... Most of the carrier is still there so some areas are polished up and safety rigged for tourists but there are a few places he was warned not to go with out a partner.... I was fascinated to find out it was the last Diesel..... :th

This was while I was deployed to the island of Terciera in the Azores. The little sea side town outside the base main gate was about a 1.5 mile walk and we'd walk to town and eat there and drink wine.
Ah the rough live of a seaman ;) I guess it makes up for the weeks at sea huh?

So you are saying your sons aren't heavy on the facial hair? There was a boy in DW's class that had a full beard at 14. Drinking age was 18 and a local store gave kids a free beer in their 18th B-day. Apparently he didn't feel right collecting his since he'd been buying beer for years.
 
Morning all and Happy Saturday!

It's going to be another miserable hot day here also. We have a heat advisory with temps going to the mid 90s this afternoon. We put electricity in the year the temps were in the mid 100s here. I remember the air being so hot it was actually uncomfortable to breathe it. DH and I were up at 5 to run wiring in the attic where the temps were easily 20 degrees higher then they were on the main floor, then out to dig a trench for the main power cable to run. By 10 AM we were in the shop where it was cooler sitting in front of our fan which was being powered by our generator until 6 pm then back to work.

I seldom complain about hot weather being a hot weather person but that was nasty hot weather.

Great pictures guys. The bread makes me crave a loaf of homemade. I haven't had bread since I started my diet and it's the one food I really miss. That and cookies.

Agenda for the day, breakfast then back to the wood pile. Will be glad when we are done harvesting wood.
