I love turkey- I can eat it several days in a row.

I like leftovers!!! :drool

Good to go on both counts... Since it's just me here, a 10-12 pound bird is good for 4-5 days of eating. By the time I'm done, I really am done... :sick for at least another month or two :D I generally buy 3-4 birds for the freezer when they go on sale right before Thanksgiving. So every couple of months I can pull one out and gorge for a few days.
 
Funny thing is that I slapped the lid back on the tote and went back downstairs.
It is difficult! Can't throw stuff away that isn't trashed. Don't really have a need for it now but MAYBE you will later, or the kids will. So back on goes the top.

Not much choice unless you have a lot of people or a REALLY small turkey.
 
I spatchcock all poultry, it cooks so much more evenly and the white meat stays juicier. Cut along each side of the backbone with a large serrated knife and remove it, then toss it in the pan with the bird and the neck to roast to use later for stock. Flip the bird over and press firmly on the breast to flatten it, then tuck the wing tips up over the top. I usually put the bird on some whole peeled carrots to lift it off the bottom of the pan, then add a half cup of white wine (to both pan and cook). Cook at 350 for 10-15 minutes per pound (I usually start them at 450 for 15 minutes, then reduce heat to 350). Totally easy, and especially the white meat so much tastier.
 
Yeah, there is just something about the smell of turkey being baked in the oven that makes my mouth water even now. Our local C&R grocery offers a point program with your purchases. Something like 5 points per dollar spent. I have something like 22,000 points right now. Somebody pointed that out to me saying, Boy you have a lot of points accumulating. Yep. They give away turkeys. Usually it's 8000 points gets you a 10-12 pound bird. I'm shooting for two turkeys this year and not paying a penny for them.

Just realized that opening day for deer season is next Saturday. Looked at the weather for next Saturday and had to ask myself, how bad do I want to sit out in the cold at 6AM and NOT see a deer? Temp 39 with a low of 21.....Hmmmmm no brainer. No way I'm sitting in the woods when it is 21 degrees. Not that hungry. Oh, we will probably hunt, afternoons though. I'm really not expecting the season to be that fruitful here. The neighbor is harvesting timber next door and it's been non stop chain saws, skidsteers and trees crashing to the earth every day for the past two weeks.

Not conductive to good hunting. Plus we have only caught two deer on our game camera and that was at night. A buck is working a cedar tree on one of our trails. Need to put the camera up and see if we can get a picture of him before one of the Amish neighbor's 18 sons decides to take him home to be stuffed in fruit jars and canned.
