Newbie POL chickens often cannot contain themselves and will lay in the winter.

I've got older hens and was really surprised when 2 Marans started laying after a couple of months of not laying (molt and then a slew of bad/cold/windy/cloudy/wet/winter weather...hey, they're French and rather picky.) Got about 8 eggs between two of them and now they're kaput again. They're packing away the groceries, though, and look as marvelous as three French hens can.
