They're Cooking A Silkie On Food Network For Halloween...

First, I am not butchering my silkies.
Second, a friend of my daughter's found some links on cooking them and sent it to me.
From what I understand, the skin is slate/black/gray as are the bones and the meat is a grayish blue blackish color.
It can be found in stores in some Asian communities. To them, it has medicinal uses also.
It is also tougher than regular chicken so it is usually cooked as soups, stews or braised.
I read somewhere also that black chicken has a natural gamey taste - and less fat than normal chicken.

I've butchered excess Silkie roos and yes, the bones, skin and some of the meat is black, it still tastes just like chicken. Once I got it deboned and chopped up for a casserole, the kids couldn't tell a difference.

Dark meat is slow twitch. Reason being is that what makes dark meat dark is the fact that it contains more mitochondria to convert fat stores in the dark meat into energy for the long term such as standing up. White meat is fast twitch because instead of maintaining high levels of mitochondria, it keeps a larger store of ATP so the energy is already there and available for use such as in immediate flight. Birds that fly all the time such as ducks are all dark meat in order to continually make ATP to sustain flight (muscle contraction, or more technically, ATP allows muscles to relax).
 
I'll have to try and catch the show. I have a friend that sends me silkie recipes all the time. I keep telling him he can come get one to cook, but he has to clean it himself

Saw black silkie chicken meat all packaged nice and neat at the Asian grocery I go to occasionally. I couldn't believe the price! Made me wonder if it might just make my chicken hobby pay back. But silkies are soooo cute.
