Thinking about New Years Eve party food

Hoppin john is supposed to bring good luck on new years day..i'm making it for the first time this year.

Hoppin John is black-eyed peas served over rice, and we also put chow-chow relish on ours. Also we have cabbage, which is for wealth. And Jim has pickled herring for whatever reason (ick!not me!) it's some Wisconsin thing I think.

I like chips & salsa, and the spicy chex mix snack stuff, and alligator eggs (sausage-cheese balls--recipe is in the BYC cookbook!) & veggies - carrots, celery, etc with a blue cheese dip, for finger foods.

I'm doing a brisket to serve with rolls too, for little sandwhiches if people want them.
 
Sausage stuffed rolls

1 lb sausage
1 8 oz block cream cheese
2 tubes crescent rolls

Allow cream cheese to soften.

Brown Sausage

Combine sausage and cream cheese

Place one tablespoon of muxture in center of each triangle. Fold over and bake according to package directions.


Pretzel Rollos

Place square preztels on wax covered baking sheet.

Place a Rollo candy on each pretzel.

Bake at 250 for 2 minutes (you just want the rollo to soften)

Gently press a pecan half onto each roll.

Chill until set.

Allow to come back to room temperature before serving.
 
Okay, this one sounds really redneck and WAY too simple, but it tastes GREAT and I guarantee you will NOT have any leftovers, no matter how many you make. Take a pound of normal cheap bacon, not flavored. Cut it up and use the short bits to wrap around frozen tater tots. Secure with a toothpick. Bake at the temp it says on the tater tot bag until the bacon crisps up a bit. Takes a while, maybe 45 minutes but it tastes REALLY GOOD!!!
