Thinking About Starting With Quails- Total Newbie

Hello! I'm very new to this forum, but I have a few questions. I'm very interested in learning how to hatch and raise quails as a new project. I'm still deciding between Coturnix and button quails. I have the necessary equipment to make a brooder, and I have an incubator for the eggs. I'll have to turn the eggs manually, but that's okay. I was thinking of starting with 12 eggs since I don't want to be too overwhelmed. I'm looking at the food options since that seems to be the most immediate issue, so I'm looking for some places that I can pickup from rather than going online (might take longer). I can also crumble boiled egg and use veggies Anyways, I live in Arizona, so it's difficult to keep birds outside. I also would to try selling the quails once they're old enough. If anyone knows any contacts in AZ, I'd appreciate them. Anyways, I'd appreciate any feedback on which quails to raise (leaning towards buttons) and where to sell once they're old enough.

What are you plans for the quail? Button quail are pretty much just for pets. Coturnix quail are good for eggs and meat as well. If you find a market for buttons you might do well, but it is more of a niche market than coturnix.
This is exactly what i was going to write. They're both "quail" but have totally separate purposes and requirements.

I plan on hatching the eggs and raising the chicks till they're mature enough to be sold. Since I'm not too familiar with the market for different quails, I'm looking for guidance on which quails would be easiest to sell. Based on initial research, I think button quails would suit me better, but I'm still struggling to find where I could sell them.

In my experience (I'm in CA), there's a serious market for Coturnix quail, but not for buttons. Especially during this weird time, a lot of people are looking for ways to be more self sufficient, so they want something that will provide them with food.
