Thinking of getting Burbon Red eggs

When should I set them if I want a smaller turkey for Thanksgiving. I would most likley want to butcher 1st or 2nd week of Nov.

That means I should be setting them now? Can't do that, have to wait till close to the end of April. If you butcher a little early, maybe just 6m, do you lack flavor, or have little meat?
