I love trying exotic meats from my butcher.


1 lb. Diced Kangaroo
1 Fresh pineapple, cut in large chunks
5-6 Kiwi, cut in large chunks
Marinade:
1 cup soy sauce
½ cup orange juice
1 tbsp. brown sugar
2 tbsp. malt vinegar
1 tbsp. ground allspice
1 tbsp. garlic powder
1 tbsp. onion powder
2 tsp. black pepper
1 tsp. cayenne pepper (or more if you like it hot)
1 tsp. ground nutmeg
1 tsp. cinnamon
¼ cup olive oil
juice of 1 lime


Method:
Combine all ingredients to make the marinade and add kangaroo. Marinate for
no less than 2 hours. Remove kangaroo from marinade and discard left over
marinade.
If using bamboo skewers, soak them in water for 20 minutes.
Slide one piece of pineapple on skewer, then one piece of kangaroo, then one of
kiwi and repeat.
Grill on a bbq, indoor grill for approximately 5 minutes. For oven broiling, place
kebabs on wire rack on cookie sheet and broil for 4-5 minutes, turning once
during cooking. Note: For best flavour kangaroo should be served rare.
Serve with a mango and red pepper salad and a tall, cold, light beer – tastes
just like summer!
