I would raise my own chickens(like you) if I had a processor around....(We each have our own issues, you lack of weaner pigs, me lack of chicken processor). The beef cow is next, wife gave ok for the fence(well the expense of the fence)...
I would love to have a milk cow too, but can't see myself milking it twice a day EVERY day. Wife won't go for goats milk....
My goal is to be as self sufficient as possible.... Have a momma cow, that has a calf we eat(FIL has two bulls)... I can get free pigs... Chickens, well self breeding broilers would be great(but no processor), I have 23 acres of which 20 is tillable and I have the tractor(JD4020) to work it. I currently bale hay, but could raise my own corn and beans to feed if needed.... Have well and septic..all I need is a cheap windmill...$40K for a 10KW just doesn't justify it yet....
