Got three done this morning. I started at 6:00 but it was still miserably hot out. Got the big rooster done and was glad since he had started biting me. They are way over 8 weeks and I still have 4 more to go.

Thanks. The ones I have processed so far have been really tasty. I only have 3 left, I forgot the other white one was an EE. Even though I processed these late, it seems to make no difference in the meat, not really any tougher that I can see. Going to try to get those last three on Sunday.
When those are done it will make 21 that i processed this year myself.

It looks very tender. Must be tasty too. What method do you use to kill the rooster? There are so many opinions out there as to the best way to butcher a chicken.
 
I hang them upside down and slit the throat; same way I did the hens. I know there are a lot of options but it is only to make us feel better, no matter how you do it, the chicken gets killed.
