I noticed that my new chicken has mites, and I’m wondering if I should either A. bathe her in flea shampoo and then dust her and her coop/run with DE or B. get something stronger like poultry dust.

That’s what I was thinking as well, though it’s a much further drive to get that.Poultry dust. DE will do nothing.
for the coop? im not bashful with my coop .. i'll get the pump up sprayer and get the birds all out early and hose everything down with bleach.. then do inside and out and the ground with bifen and let it dry .. during the summer anyway, if you got a long hose that sits in the sun and gets red hot, hot water is 'very' effective as well .. so .. it depends on the setup you have .. but in the warmer months anyway every time you change out the flooring and nest boxes you should treat the whole thing 'good' with something so they cant get a good foothold ..
