Our spring break starts March 18th... Do you guys still have snow then? What are some things we can do????

Depends on the year and where you are in the state, etc. If you ski or ride,
guaranteed there will be snow on the slopes. If they don't have enough natural, they just make their own.
So which part(s) of VT are you going to?
- If way north, Jay Peak has good skiing and they put in an indoor water park last year. My younger daughter is there this weekend blowing the money her GS troop has saved up. They are all seniors and when the troop breaks up the GS council get any left over money that the GIRLS raised selling cookies through the years. They are making sure there isn't any
- If mid, (and you ski/ride) Stowe or Smuggs. (Don't try to take VT 108 between Smuggs and Stowe, it is closed in the winter). Sugarbush is another large and nice ski area in the Mad River Valley. If you like a challenge, Mad River Glen.
Of course you HAVE to do the Ben and Jerry's factory in Waterbury and
don't miss the cider doughnuts hot out of the cooker (unless you are gluten intolerant, then forget I said anything because they are REALLY lousy
but there is a lot more at the store so go anyway) just up VT 100 at the Cold Hollow Cider Mill. Lots of nice stores and restaurants in downtown Burlington plus a quick trip through the Champlain Chocolate factory on Pine St. Check out the "seconds". Never found ANYTHING wrong with them other than maybe size/shape/wrapping and they are WAY cheaper than the "firsts". I'm sure you want to buy your fiancee a VT Teddy Bear just down RT 7 at the factory in Shelburne.
Farther south there is a
Vermont Country Store in both Weston and Rockingham. They cram a LOT of stuff in those stores and they are NOT small!
Farther south: Killington and Pico - good ski mountains.
Of course you'll find plenty of good restaurants in any of the ski resort areas.
