Me neither. I like my balloons shelled- a bit less crunchy.
my recipe for balloon in shell:
ingredients:
medium quality bourbon
2-4 fresh whole limes
1/4 cup salt
1 tbs black pepper corns
1 tsp chili powder
1/4 cup soy sauce
pour two fingers of bourbon into glass add 1 cube of ice and take a sip.
start with delicately slicing the shell of balloon, longitudinally. split in half, similar to an avocado.
place on a cookie sheet
let rest.
take a healthy sip of bourbon.
mix salt, pepper and chili powder together in a mixing bowl.
drink the remainder of the bourbon.
add the soy sauce to the mixture
fix another two fingers of bourbon
slice the limes.
another drink of bourbon
squeeze the limes into the mixing bowl.
another drink of bourbon.
fix another two fingers of bourbon.
using a whisk, mix all ingredients until well blended, but not frothy.

take a basting brush, and liberally apply the mixture to each half of the balloon in shell, completely covering

take cookie sheet out of fridge and place into oven.

let bake at 425 for ten minutes, then turn off heat, because you're about to forget about what's in the oven.
