Baking with duck eggs is great. Otherwise, I slip one in with a couple chicken eggs for scramble / omellette breakfast.
You know I didn't think about that but I'll get on it.
These are just the ones that I thought would be good for meals other than breakfast or snacks, and in the case of new orleans style I thought it would actually be healthy with so many veggies. But, there's a whole lot of stuff in that book that I never thought of-- some of it dated, but none the less good ideas to use up eggs. Lots of fatty stuff with cream sauces that would be best served in moderation today, and two pages of drinks (hot and cold) that use raw eggs!
Scrambled eggs is one of the things I will not use duck eggs for... in my experience they cook to quickly and get rubbery. Best to mix them with chicken eggs for that-- However french toast with duck eggs is out of this world! Take a big loaf of french bread or homemade white, slice it thick, dip it in the raw scrambled duck egg on both sides, dip the dredged bread in crushed corn flakes, cook on a griddle on low heat= perfection on a plate.
One of these days I may go through and just type out every recipe in the book for the database
Loved those recipes. made me hungry . My dh won't eat a duck egg, so I bake with them and when I cook eggs for egg salad I put a couple duck egg in the pot and mix them in with the chicken eggs, he never notices.
